They’re cooked in a special cast-iron pan with shallow indentations that help them keep their round shape and fluffy interior. Once one side is done, they’re flipped quickly with a fork. No one knows exactly where poffertjes come from, but the first printed recipe appeared in the Handbook for the Perfect Dutch Kitchen Maid’ in 1746. They’re considered a classic Dutch treat and they’re still a beloved street food and a staple at fairs and food trucks across the Netherlands.
